I'll stick my oar in for starters,

Risers - i have 30mm risers on mine, cables are fine on full lock. I am soon to fit Renthal Enduro High bars as well as the risers (i'm 6'4" and need a very upright riding position) this might well be a different story. I think Skunkmoto has these bars, and Tripletom does, tho i don't know if either have risers as well. Neither have mentioned changing cables to fit the high bars.

Power socket - Coxwain (pro bike mech) fitted a set of Gen Yam heated grips recently and they came with a plug to fit that connector, so heated grips are good to go - others have fitted 12v aux sockets and GPS powered from that socket, realistically if you put all three from that supply will they ever all get used at once? the grips and the GPS yes, but what are the chances of you wanting to blow up your tyre with a compressor, keep your mitts warm and see where you're going all at once? No great hardship to turn the grips off for 10mins if thats the case eh?

Crash Bars - not sure i can help you on this one as i have my own reservations about the adequecy of all the ones i've seen so far. Its part of the reason i'm doing something myself
