For proper technical advice you should join the XT Supporters and post in Ask Kev. For �10 you will save more than that in garage bills and have the satisfaction of doing it yourself.
I cannot go beyond the general principles of diagnosis because I am not a qualified mechanic and do not want to lead you into unnecessary work. When you 'serviced' your bike - what did you do? did you disturb any plugs in the wiring loom? it is easy to stretch a thin loom wire and cause intermittent contact. It does sound to me that your problem may be poor fuelling but Kev could guide you through the checks and procedures to diagnose properly.
