2k rpm, going up a steep slope - that really sounds like you were just under-powered and you were running a cold engine, so the bike could have been a little jerky. Did the bike become choppy before it stalled on you, making distinguishable low frequency thumps?
If you want to go slow, you have to rev the engine and slip the clutch, but what's the point of going this slow uphill? Just go a little faster through the climb and then pull in your clutch and slow down/stop at the apex, if you need to watch out for traffic as you exit the garage.
