I use a cable tie round the swingarm to hold the caliper in place before I take the wheel out and just leave it till everythings assembled then snip it off - works a treat.
As for the rest... Cable tie the sprocket to the spokes, put plenty of grease on the spacers to stick 'em in place and use a chock under the tyre to roll the wheel onto so it's the height it needs to be.
