Do you have to do that with all pannier racks out of curiosity? ie SW Motech EVO, Touratech ones etc?
Do you have any more pictures of the rear tail off etc? And electrics disconnected?

It sounds worse than it really is..
unplugging those plugs is as difficult as unplugging a standard household power cord. The cables itself are just tied to the bike frame using common basic
cables ties
. You'll have to replace them afterwards. Will take you about 5 cents worth of replacement parts
Take your time for it, there is almost nothing that you can do wrong. I believe there were 4 plugs, 4 different types, so you can't even plug them back in any other (wrong) way...In fact, I was having similar fears before starting. And actually doing that helped me a lot in building enough confidence to learn other things. Make sure you have some propper tools for it. ( A ratchet set with some extensions really is a must have). Have someone assist you?
