It sounds worse than it really is..

unplugging those plugs is as difficult as unplugging a standard household power cord. The cables itself are just tied to the bike frame using common basic cables ties . You'll have to replace them afterwards. Will take you about 5 cents worth of replacement parts

Take your time for it, there is almost nothing that you can do wrong. I believe there were 4 plugs, 4 different types, so you can't even plug them back in any other (wrong) way...In fact, I was having similar fears before starting. And actually doing that helped me a lot in building enough confidence to learn other things. Make sure you have some propper tools for it. ( A ratchet set with some extensions really is a must have). Have someone assist you?
