Before you go too far with your peg-lever positions don't forget that your pegs have removable rubber covers that will change where your brake & gear levers are in relation to your pegs.
I have just fitted pivot pegz and after hours of dicking around with the levers, I'll need to adjust them all over again.
Also consider that you may want to get some MX or adventure boots which are less flexible than the road boots you are used to and the toe box tends to be a lot bigger, so may want a bit more clearance UNDER the gear lever.
Glad you are enjoying the flying hearing aid. My spokes looked like that for 10 minutes when new.
