Hello XT owners

I am the proud new owner of an XTX660 2005. I just bought this bike is superb condition with 55ookm and fitted with airbox mod, potentiometer and aftermarket exhausts. However it seems to be poorly set up with almost no torque and running roughly perhaps over rich.
Can someone tell me how to reset all the adjustments (MAP??) to factory stardard so that I can start from a known point. I can remove the pot if necessary. Thanks in anticipation. Kiwi Pete.
