I would also say stick with the double - i'm pretty sure the brakes on the XTR are the same as the Ten, just that there's only one - and the single brake on my XTR scared the sh*t out of me when i had luggage on - unless you really want to save weight i dont think its worth it.

Alternatively, go for a single and an uprated caliper? although then all braking effort goes into one disc, more chance of brake fade if on a long decent i suppose, but i dont really know how likely that is.
