Lowering the XT-R

Not sure if this is the right place in the forum to post this, but anyway:

My wife and I are planning to do Iceland, as I've mentioned somewhere else here. She needs a bike that is more capable than her Guzzi Breva to handle the roads up there. Now, she has this general height issue that applies to so many girls, so a standard XTR is too high for her. We need to bring the seat height down to at last 80 cm - preferably 78. If this is not possible, I'll be forced to buy her a Suzuki Freewind (*shudder*) which is low enough.

Ladies and Gentlemen of the board: how can I possibly lower the R without compromising the ride quality too much, thus introducing my wife to the wonderful world of XT660? Have any of you done this or seen it been done?

I am all ears.
