I use Motul 5100 10w40 (which is the same as Yamalube at the dealers). Always have done. Nearly 40K miles now and not a hint of a problem.

Coolant is more of a minefield. You must avoid anything that contains silicates or borates. Look for stuff that says either "organic" or is clearly labelled "silicate and borate free". Anything with silcates/borates in will quickly ruin the mechanical seal in the water pump.

I use Motul Motocool "Factory Line" Organic+ (which is also the same stuff as Yamalube). Make sure you do not get tempted by Motul Motocool "Expert", that is not silicate free!

So do you reckon it's worth flushing the radiator through first?

Never a bad idea, but not essential unless you think it might be contaminated, like if you've had cylinder head gasket trouble or have had to put straight water in after an emergency. I find it's the fins blocking up on the outside with mud and other debris that's more of a problem on the XT. It's well worth cleaning them out every now and again.

Yep four stroke/4T motorcycle oil suitable for wet clutches. The "normal" recommendation for UK riding is semi-synthetic 10w40. As I mentioned earlier, Yamalube is what you'd get from a dealer, and is the same as Motul 5100, which is available at very reasonable prices on ebay etc.
